Usage
This starch is used as a thickening agent in food preparation. It also provides a lighter fluffy texture to baked goods. Chefs use the starch to make a gravy with stock and hot water.
To make a gravy using potato starch mix with cool water to make a slurry and then whisk into simmering stock. Stir for 2 to 3 minutes until the mixture has thickened. Add stock and salt to taste.
It is used to thicken sauces and can even be used in making custards and puddings.

To extract the starch the potatoes are crushed into a very fine powder. This is washed and then dried into the very fine potato starch powder.
Under a microscope you'd see the starch as an oval spherical granule that is typically 10 um thick. That is small.
Today potatoes are specially grown for starch production. Before that they were a by-product of frozen chip production.
Waxy potato starch comes from a new type of potato plant that was developed specifically to produce amylopectin.
