|Also known as Burghal, Bulgar and Bulgur wheat. It is made from Durum Wheat that has been par boiled. It has a light, nutty flavour.
Burghul can be used in pilafs, soups, bakery goods, or as stuffing. In breads it adds a wholegrain component. It is usually an ingredient of Mediterranean cooking.
It has a mild, nutty taste and a chewy texture.
Compared to un-enriched white rice, Burghul has more fibre and protein, has a lower glycemic index and a higher level of vitamins and minerals.
It may help to reduce the risk of inflammatory effects, fight diabetes and improve digestion.
It is the main ingredient in "Tabbouleh Salad'.
Burghul is a Persian word meaning "bruised grain."
