It is used worldwide as a thickening agent in various foods. It is used as a gluten free food additive. It can gives a chewy or crispy texture to cookies or cakes. Some puddings, pizza dough, cookies or yogurts can be composed of Starch.
It has a sweet and mild flavour, that's why it is easy to combine it with other flours.

Starch is processed into several forms: hot soluble powder or meal or pre-cooked fine or coarse flakes, rectangular sticks, and spherical "pearls".
It comes from the root of Cassava plant. Cassava is sometimes called "Yuca root".
