Usage
Soak in fresh water for about 10 hours at 4 degree C. Drain and rinse well. Cook for approximately 45 to 60 minutes and drain and rinse before use. They are much used in Italian, Portuguese and Greek cuisine in soups, stews and salads. Also delicious with chorizo, sausages and polenta.
Cumin, cayenne, chili, parsley, pepper, sage, thyme and even lemon are all suitable with cooked beans.
Borlotti Beans have a nutty, creamy taste and a chestnut flavour.

Are known as Roman Beans because the Roman Army had a preference for them.
Some people choose to call them Cranberry Beans.
